Really Hot Habanero and Elderberry Wings

Ingredients

  • 1 kg Chicken wings (Little over 2 Lbs)

    Marinade:

  • Elderberry juice - fresh (200 g fresh elderberries)or substitute with unsweetened elderberry juice from the store
  • Habanero juice - fresh (200 - 240 g fresh habanero)
  • 1/4 cup Soy sauce (Kikkoman or other Japanese)
  • 1/4 cup Olive oil

Directions

  1. Remove the stems from the habanero and use a juicemaker to make fresh habanero juice.

  2. Make also the fresh elderberry juice in the juice maker.
  3. Mix the marinade and cover the wings with marinade.
  4. Marinate the wings for 6 - 12 hours.
  5. Grill the wings until the skin gets crispy but not burnt.
  6. Enjoy with or without your favorite dip. Freeze leftover marinade an use later for another batch of wings.
