Ingredients

Chihuahua cheese

Chorizo sausage

Directions

Use a small casserole dish; shred in Chihuahua cheese (a white Mexican cheese) and crumble up Chorizo sausage into it. Bake it in the oven at 350 for about an hour (the sausage has to be cooked). The sausage is spicy and no other seasonings are needed for this dip/appetizer. The sausage is really greasy and allows the cheese to break up and be scooped with tortilla chips. Or - more traditionally, the restaurants serve it with flour tortillas (scoop onto the tortilla and roll it like a soft taco).

"It's as good as everyone says! I used a boneless chuck roast (3 lb) and cut the ranch dressing in half. I added an additional 1/4 cup water. I cooked it 9 hours. It came out very tender, and with a gravy that was superb! Served with mashed potatoes and steamed fresh garden peas. Thanks, yooper! This is one that I will repeat!!" - mizznezz

But, this is a good substitute for nights when firing up the grill would not be optimal. Made several tweaks. Also recommend keeping some sauce on the side for dipping." - mrsoul51

"I tried this today, minus the celery seed, added minced garlic. I only had thinly sliced, boneless, skinless chicken breast on hand, so used that. I loved it, and will try it again using different hot sauces (we have at least a dozen kinds in the pantry b/c of DH). DH enjoyed it, as well as my ... " - miss tinkerbell
