Fresh Pasta for Lasagne

Ingredients

  • 2/3 pound sweet Italian sausage (2 links)
  • 1/3 pound sweet Italian sausage (1 links)
  • 1 pound ground chuck 80/20
  • 1/2 cup diced onion
  • 28-ounce can whole peeled tomatoes (San Marzano tomatoes) - crushed fine
  • 1 teaspoon minced garlic
  • 12 ounces tomato paste (2 6 oz cans)
  • 15 ounces tomato sauce (1 can)
  • 1/4 cup water
  • 2 tablespoons white sugar
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 15 ounces whole milk ricotta cheese
  • 1 large egg
  • 1/8 teaspoon nutmeg
  • 1 pound whole milk mozzarella shredded
  • 1/2 cup freshly grated romano cheese
  • 1/2 cup freshly grated parmesan cheese

Directions

  1. In a large saucepan, cook the sausage, beef, onion and garlic until cooked through. Drain the fat and set aside.

  2. In a large pan, add the tomatoes, paste, sauce, water, sugar basil, fennel, Italian seasoning, salt, pepper and parsley. Stir well. Simmer, covered, over low heat for 1 hours, stirring occasionally.

  3. Add meat mixture. Stir well. Simmer, covered, over low heat for 1 hours, stirring occasionally.
  4. Place the lasagna noodles in a pan of hot water and make certain they are completely covered. Allow them to sit for 30 minutes to soften, then drain the water.
  5. In a small bowl, mix together the ricotta cheese, egg and nutmeg.

  6. In another small bowl, mix together the Parmesan and Romano cheeses.

  7. In a 9 by 12 glass baking pan, spread 1/2 cup of meat sauce on the bottom of the baking pan.

  8. Place 4 lasagna noodles over the sauce.

  9. Spread half of meat sauce on top of the noodles.

  10. Spread half of the ricotta mixture over the sauce.

  11. Spread half of the Parmesan mixture over the sauce.

  12. Place 4 lasagna noodles over the sauce.

  13. Spread the remaining half of meat sauce on top of the noodles.

  14. Spread the remaining half of the ricotta mixture over the sauce.

  15. Spread half of the Parmesan mixture over the sauce.

  16. Top with 4 more noodles, the remaining sauce, 2 cups of mozzarella and the remaining Parmesan mixture.

  17. Preheat oven to 375F. Cover with foil. Bake immediately if desired at 375F for 25 minutes.
  18. Remove foil, add topping cheese and then bake for an additional 30 minutes at 325F so the cheese doesn't burn.

  19. Allow the lasagna to cool for 15 minutes before slicing.
