Ingredients

    • 1 whole chicken (3-3 1/2 pounds)
    • 1 Tablespoon Olive oil
    • 1 Tablespoon juniper berries (~30 berries)
    • 1 Tablespoon cumin seeds
    • 1 Tablespoon salt
    • 1 Tablespoon black pepper (40 pepper corns)
    • 1 Tablespoon fresh parsley, chopped
    • 1/2 cup water

Directions

  1. Thoroughly cleaned the chicken and rinsed under a cold running tap and patted dry with a kitchen towel.
  2. Place the chicken on a wire rack set in a shallow roasting pan and grease the skin of the chicken with either butter or olive oil.

  3. Season the bird with loads of Juniper Berry/Cumin Seasoning. Additional salt and pepper can also be rubbed into the body cavity for additional flavour.

  4. Preheat oven to 450F (230C). Roast the bird at this high temperature for the first 10 - 15 minutes. This surge of heat will result in a really crispy and brown skin and a more delicious, succulent meat.

  5. Reduce temperature to 375F (190C) for 1 hour. Remove, let rest.

  6. Pour off fat from roasting pan, add water to deglase. Bring the sauce to a boil and cook for 3 to 5 minutes until it reduces slightly (25%).

  7. Serve the chicken on a platter and pour over the juniper berry-cumin sauce. Garnish with fresh parsley.

  8. Add equal parts of juniper berries, cumin seeds, salt, and pepper corns to spice mill. Blend into fine powder.
