2 T. Kosher salt
2 T. minced onion
1 T. minced garlic
1 tsp chili pepper (Puebla or any dark, deep chili power)
1 tsp smoked paprika
1 tsp ground black pepper
6 boneless skinless chicken breasts
3 strips hickory smoked bacon, raw and chopped
1 Sweet onion julienned
1 C. Chicken stock/broth
1 Tbsp. Hickory Liquid Smoke
1/4 C. Dark Brown Sugar
1 C. sharp cheddar cheese
1/4 cup chopped green onion
1/2 cup chopped tomato
Mix the first 6 ingredients together and evenly coat chicken breasts in seasoning. Marinate for 30 minutes.
In a 14 inch frying pan, sear the chopped bacon until crispy, remove, and reserve fat.
Sear the chicken in the still hot pan, browning on both sides. Remove once browned.
Add the julienne onion to the hot pan.
Once the onion starts to soften, deglazing with 1/2 the chicken stock. Add the liquid smoke, brown sugar, and remaining chicken stock. Simmer for 5 minutes on medium.
Add the chicken back to the pan, smother the chicken with the cooked onions & pan juices. Simmer for 5 minutes on medium.
Evenly spread the cheese over the top of each breast, spoon some liquid over them to melt the cheese. Simmer for 5 minutes on low until the cheese is melted.
Plate and garnish with the cooked bacon, green onions and tomatoes.
