2 Tbs butter
1/2 medium onion, chopped
1 large garlic clove, chopped
1/4 tsp cumin
3 or 4 peeled canned tomatoes, or 2 peeled fresh tomatoes
2/3 C whole roasted green chiles
8 oz white cheese - Monterey Jack is ok
3 oz cream cheese, diced
1/2 - 2/3 C cream
Warm cheese to room temperature. Melt butter in small saucepan, add onion and garlic, cover and sweat for 5 minutes over low heat. Meanwhile, place the tomatoes, green chiles, cumin and pepper in a food processor and chop thoroughly (don't puree). Add tomato mixture to pan, cook at medium heat for 3-5 minutes or until most of the water has evaporated.
Remove pan from heat, add cheese and stir until melted. Add cream to thin as needed. If you need to rewarm the dip use very low heat to avoid breaking down the cheese. Serve with tortilla chips, or flour tortillas© Jim Catanich
"This spinach and strawberry salad is topped with a fabulous homemade poppy seed dressing." - chef john
"This sauce was 'mild' for our tastes so I used 1/4 cup each Frank's Red Hot and butter (not margarine), added 1/4 teaspoon garlic powder, healthy dash of Worcestershire sauce, and about 1/2 teaspoon chipotle (or ancho) chili powder." - mrsoul51
"Someone who made this recipe definitely knows a thing or two about good pizza! I've come across so many recipes that say they are pizza sauce when it's really some variant of marinara that you would put on pasta...they are not the same. This sauce is thick, robust, and full of flavor and based on the pizza I've had in New York, it is the real deal! My go to recipe from now on!" - dan w.
"A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, are the perfect..." - sheldon
"Awesome recipe! I made with 1/2 tsp ground fennel so there would be no whole seeds. Very rich and flavorful sauce." - shakahari
