Caribbean Chicken - Roasted Spiced Chicken

Ingredients

  • 1/2 cup chopped onion
  • 4 garlic cloves, chopped
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoons peeled fresh ginger
  • 2 teaspoons chopped fresh thyme
  • 1/2 hot chile pepper - fresh green, seeded, minced
  • 2 tablespoons olive oil
  • 1 tablespoons allspice (~14 berries)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper (~12 pepper corns)
  • 1/2 teaspoon ground cinnamon (~1 inch long)
  • 1/2 teaspoon ground nutmeg (~ 1/2 nut)
  • 2 whole chickens - quartered
  • 1 gallon reclosable plastic bag

Directions

  1. Place onion, cloves, vinegar, honey, ginger, thyme, pepper and oil in blender.

  2. Place allspice, salt, pepper, cinnamon, nutmeg into spice mill and pulse into a fine powder. Add to blender.

  3. Puree into coarse marinade.

  4. Add chicken to reclosable bag. Add Marinade to reclosable bag. Coat chicken.

  5. Refrigerate at least 8 hours (max 36 hours). Turning chicken occasionally.

  6. Preheat over to 400F. Arrange chicken pieces with marinade on rimmed baking sheet.

  7. Roast until cooked through, about 45 minutes.
