Campfire Chili

Campfire Chili is a traditional camping recipe of pork or beef stewed nice and slow in a rich red chili sauce over an open fire, hence the name 'Campfire Chili'.

Campfire Chili

Ingredients

  • 1 can (15 oz) no-salt tomato sauce
  • 2 raster of bacon – thick sliced

Hamburger mix

  • 2 lbs 80 /20 course ground beef
  • 1 medium sized onion - diced
  • 2 garlic clove - fine diced

Spice Packet #1

  • 2 tsp mild American sweet paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp Light chili powder
  • 1 tsp Dark chili pepper
  • 1 beef flavor bouillon cube
  • 1 chicken flavor bouillon cube

Spice Packet #2

  • 3 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1 tsp cayenne chili powder
  • 3 tsp New Mexico chili powder
  • 1 tsp Light chili powder
  • 1 tsp Dark chili pepper

Spice Packet #3

  • 2 tsp New Mexico chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder

Instructions

Before you leave:

  1. In a pan, cook ground beef for 5 minutes.
  2. Break up ground beef and add onions. Cook for 7 minutes
  3. Add garlic and cook for 7 minutes
  4. Drain ground beef and let cool. Place in Zip-log gag
  5. Measure out Packet #1, #2 & #3 and place each in a small zip-lock bag

At the campsite:

  1. Prepare a fire and let it burn down to the coals. Maintain heat around the fire at all times.
  2. Warm the Dutch oven on a grate over a hot fire (more coals than flame) to heat it up about 5 minutes before cooking.
  3. Using your saved bacon grease or chopped up bacon, season your Dutch oven to prevent sticking or burning while cooking. Cook for 4 minutes over medium heat
  4. Add Hamburger Mix, stir and cook for 3 minutes over medium heat
  5. Add can of tomato sauce, stir and cook for 5 minutes over medium heat
  6. Add Packet #1, stir in and add 2 cups of water to cover. Cook for 1 hour over low heat
  7. Add Packet #2, stir in and cook for 20 minutes over low heat. Remove from fire until ready
  8. Fifteen minutes before you are ready to serve, return to fire, add Packet #3, add ½ cup water, stir in and cook for 15 minutes over low heat
  9. Serve with fixings
