Raspberry and Cascabel Wings ( Hotchili-mikes )

  • 2 kg Chicken wings
    Marinade:
  • 2 ,5 dl Raspberry juice - fresh
  • 1 dl Soy sauce (Kikkoman or other Japanese)
  • 1 dl Olive oil
  • 1/2 dl Lime juice - fresh
  • 1 Tbsp Honey
  • 50 g Cascabel - dry
  • 25 g Oregano - fresh (or substitute with 2 Tbsp dry oregano)

    Make the raspberry juice from fresh raspberries (500 g fresh raspberries = 2.5 dl raspberry juice) in a juice maker.

    Remove the stems from the cascabel and put all ingredients in a food processor and mix it with the steel blade until you have a smooth marinade. Cover the wings with marinade. Marinate the wings for 6 - 12 hours. Grill the wings until the skin gets crispy but not burnt. Enjoy with or without your favorite dip. Freeze leftover marinade an use later for another batch of wings.
