1 Poblano roasted, seeded and sliced in strips (rajas)
1/4 cup milk or half & half
1 clove finely chopped garlic or 1/2 teaspoon powder
Either a teaspoon of onion powder or 1/2 finely diced small onion
Salt to taste
Heat all ingredients over low heat - stir constantly until the cheese is
creamy. SInce poblanos vary in heat, you may want to spice it up a bit by
adding chopped serrano or jalapeņo.
