Border Guacamole
- 5 ripe avocados, preferably Haas
- 6 tbsp fresh cilantro, chopped
- 1 med red onion, chopped
- 4 jalapeno chiles, stemmed, seeded & finely
diced
- 3 tbsp fresh squeezed lime juice, I used key lime
- 1 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- shredded lettuce, for serving
- sliced tomatoes, drizzled w/cracked blk pepper
Cut the avocados into quarters. Remove
the seeds, peel and place in a mixing
bowl. Mash with a potato masher or fork
until chunky. Add remaining
ingredients and combine with a fork.
Mound on a bed of shredded lettuce and
garnish with the sliced tomatoes drizzled
with black pepper garnish. Serve
immediately.
