Country Style Broccoli Cheese Soup

2 medium heads of broccoli (1 1/4 pounds broccoli or 4 cups broccoli florets and stems), chop into 1 inch cubed
1 small onion, chop into 1 inch cubed
1 small russet potato, chop into 1 inch cubed
2 bullion cubes
1/4 ts thyme
8 ounces (about 2 1/2 cups) coarsely grated sharp cheddar cheese, plus a pinch extra for garnish
Freshly ground pepper
Over medium heat, add thyme to pot. Toast for 30 seconds.
Add broccoli, onions, and potatoes. Fill pot with water to cover vegetables. Cook for 1 hour over medium heat.
Using blender, add broccoli, onions, and potato mix. Fill blender half way with cooking liquid. Add one bullion cube. Puree for 30 seconds and add to clean pot. Repeat until done. Retain cooking liquid.
Reduce the heat to medium-low and cook, uncovered, stirring occasionally, about 20 minutes (max up to 1 hour)
Adjust thickness with retained cooking liquid if needed.
Five minutes before serving, add cheese - a hand full at a time and whisk until melted, about 1 minute.
Adjust seasoning if needed.
Serve in bowls, garnished with a pinch of cheese.
