Appetizers - Set 7 - S thru Z

TexMex Chicken Soup - Starving Teenage Approved

Prep time: 5 minutes
Cook time: 3 to 4 hours Serving: 4 adults or 1 teenage boy

Ingredients

  • 1 bag frozen grilled cooked chicken strips (24 ounce)
  • 1 can mild red enchilada sauce (20 ounce)
  • 10 ounces green enchilada sauce
  • 1 can chicken broth (14 1/2 ounce)
  • 2 cans whole kernel corn (15 ounce)
  • 1 can diced tomatoes (14 1/2 ounce)
  • 1 1/2 cups water
  • 1/2 tsp cumin
  • 1 tsp minced onion
  • 1 tbl cilantro leaf (dried)
  • 1 tbl minced garlic
  • 1 tsp black pepper
  • 1/2 tsp ground red pepper
  • 1 tsp salt
  • 1/2 cup long grain rice (uncooked)

Directions

Microwave frozen chicken strips for 4 minutes. Cut chicken strips in 1/2 inch chunks and add to crock pot.

Add remaining ingredients into crock pot.

Cover and cook on low setting for 3-4 hours.

Notes:

You can find the grilled chicken strips in the Freezer section of your grocery store.
