Appetizers - Set 4 - H thru J
Caldillo (Northern New Mexico Style Soup)
Yield: 4 servings
Cooking Time: 35 minutes
- 1 pound lean ground beef
- 2 cups diced potatoes
- 1/2 cup finely chopped onions
- 4 cups water
- 1 tsp salt
- 1/4 tsp celery salt
- 1/2 tsp pepper
- 1/4 cup chopped green chile
Fry beef in a medium sized saaucepan at medium heat until browned (15 minutes). Add potatoes and continue to fry until potatoes are golded brown.
Add onions, water, seasonings and chile. Cook for 5 minutes.
Cover, reduce to low heat, simmer until potatoes are tender. Serve hot.
