Chihuahua Chile Con Queso
- 1 cup shredded Asadero
- 1 Poblano roasted, seeded and sliced in strips (rajas)
- 1/4 cup milk or half & half
- 1 clove finely chopped garlic or 1/2 teaspoon powder
- Either a teaspoon of onion powder or 1/2 finely diced small onion
- Salt to taste
Heat all ingredients over low heat - stir constantly until the cheese is creamy. SInce poblanos vary in heat, you may want to spice it up a bit by adding chopped serrano or jalapeņo.
