Chihuahua Chile Con Queso


  • 1 cup shredded Asadero
  • 1 Poblano roasted, seeded and sliced in strips (rajas)
  • 1/4 cup milk or half & half
  • 1 clove finely chopped garlic or 1/2 teaspoon powder
  • Either a teaspoon of onion powder or 1/2 finely diced small onion
  • Salt to taste


Heat all ingredients over low heat - stir constantly until the cheese is creamy. SInce poblanos vary in heat, you may want to spice it up a bit by adding chopped serrano or jalapeņo.
