Queso Fundido Con Chorizo

• Chihuahua cheese
• Chorizo sausage

  Use a small casserole dish; shred in Chihuahua cheese (a white Mexican cheese) and crumble up Chorizo sausage into it. Bake it in the oven at 350 for about an hour (the sausage has to be cooked). The sausage is spicy and no other seasonings are needed for this dip/appetizer. The sausage is really greasy and allows the cheese to break up and be scooped with tortilla chips. Or - more traditionally, the restaurants serve it with flour tortillas (scoop onto the tortilla and roll it like a soft taco).
