Hubris Humus
- 30 ounces prepared garbonzo beans, drained
- 8 cloves garlic
- 1 cup toasted sesame seeds
- juice from 2 limes
- 1 teaspoon salt or to taste
- 1/3 cup rinsed chopped fresh parsley leaves
- 1 minced jalapeno pepper (wear rubber gloves to handle hot peppers)
- 1/2 cup extra virgin olive oil
Puree the garbonzos with the garlic,
sesame, lime juice, salt, parsley and
jalapeno adding oil slowly to create a
paste. Makes about 3 cups.
